1 cup flour (either white or whole wheat, whatever you have)
1 tbsp sugar or brown sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 beaten egg
1 cup buttermilk
2 tbsp vegetable oil
This is nice for a weekend breakfast with poached eggs or scrambled eggs. In one bowl put the flour, sugar, baking powder, badking soda, and salt —- all the dry ingredients. In another bowl combine the eggs, buttermilk, and oil. Add the wet mixture to the flour and mix by hand until mixture is the right consistency for pancakes. You can add more buttermilk to thin the mixture if you would like.
Get a griddle or frying pan nice and hot. Put lots of butter into it and get it to sizzle. You can use a 1/4 cup measure for average pancakes or you can go big at 1/2 cup. But make sure that you have a big spatula to turn the pancakes once they start to bubble at the edges.
Serve with Trader Joes maple syrup or a maple syrup of your choice.
